    In a saucepan, combine cream, sugar, ground coffee, and cardamom pods. Heat over medium until steaming but not boiling. Remove from heat, cover, and steep for 15 minutes.

    Strain the cream mixture to remove coffee grounds and cardamom pods. Return to low heat.

    Whisk the bloomed gelatin into the warm cream until fully dissolved.
