- 1Sprinkle gelatin over cold water in a small bowl. Let bloom for 5-10 minutes.
- 2In a saucepan, combine cream, sugar, ground coffee, and cardamom pods. Heat over medium until steaming but not boiling. Remove from heat, cover, and steep for 15 minutes.
- 3Strain the cream mixture to remove coffee grounds and cardamom pods. Return to low heat.
- 4Whisk the bloomed gelatin into the warm cream until fully dissolved.
- 5Pour into ramekins. Chill for at least 4 hours or overnight. Unmold and serve topped with chopped pistachios.
