- 1In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5-7 minutes.
- 2Add the minced garlic and ground coriander, and cook for another minute until fragrant.
- 3Add the rinsed lentils and broth to the pot. Bring to a boil, then reduce heat, cover, and simmer for 25-30 minutes, or until the lentils are tender.
- 4Stir in the chopped Swiss chard (or spinach) and cilantro, and cook for another 5 minutes until the greens have wilted.
- 5Remove the pot from the heat. Stir in the lemon juice and season generously with salt and pepper. Serve hot.
